Hard Baked Eggs?

So, I can’t really take credit for this idea, but it’s so neat and creative, I have to share it! 🙂

As an easy alternative to hard boiled eggs, we tried hard BAKED eggs. Preheat the oven to 325 degrees. Place the eggs in the oven, directly on the rack. It is suggested that you put a baking sheet under the eggs (on a rack below them), just in case they should get broken. I have had a couple crack, but the insides were adequately baked and there was no leaking.

After 30 minutes, remove them with tongs and immerse them in cold water. The brown spots are a normal result of the baking process. The cold water bath minimizes or eliminates them.

After they have cooled, you can keep them in a container in the fridge, using as needed. It makes a super easy protein for breakfast! I am told this provides easy peeling, even with the freshest of eggs!

P.S. – We have tried this with duck eggs successfully too!
